It is usually made from cow's milk. If it matures well, it reminds Parmesan. Kerika is a cheese that almost disappears from commercial production. The flavor is reminiscent of roquefort. Traditional Kopanistis Tinos, made from fresh milk, is a soft, salty, fermented cheese with a strong hot taste. The Graviera of Tinos has its own distinctive, subtle taste with a beautiful yellow color. It is made from cow's milk and is the evolution of the old "boiled cheese" of Tinos.
