The owner Kay retired and moved from Japan to be with his son here in Maine. He's a sweetie. He makes all his own ramen every morning. Sometimes he uses green tea and makes green ramen, or beets to make pink ramen. The menu is simple (4-6 items) and varies monthly. $$
If you love authentic ramen then you will absolutely adore Suzukiya. Noodles are made fresh minutes before you eat them. The owner is usually there making his traditional dishes. There are only 13 seats, so it's advised you go a bit early. Well worth the wait. TIP: Try the Hakata-style ramen. A mix of pork and chicken soup base & homemade organic thin noodles. topped with a slice of cha-shu, soft boiled egg, and baby bok choy.
