It all began in 2000 when Randy and Kim Hodge purchased a building on historic Aztec Main Avenue and opened Rubia’s Fine Mexican Dining. The restaurant has earned itself a regional name as one of the best Mexican dining experiences in the Four Corners area. Rubia’s offers Mexican food with a New Mexican flair. Green, red, or Christmas is the most asked question when ordering. The restaurant has expanded over the years to include a bar area and patio seating. They also offer live music on the weekends. This is approximately a 12 minute drive from the Airbnb.
