Learn how to bake sourdough or Mexican sweet bread! We will bake using traditional recipes and a starter to naturally leaven and flavour the bread.

Option 1. Sourdough
We start off with the last step of baking: you will practice your scoring technique with a loaf prepared in advance and bake it. While this loaf is in the oven, you will start your own loaf and understand what happens in each step of the fermentation process.
You will learn how to maintain a sourdough starter, how to create your own recipes and how to choose the best flour. You will understand what chemical and physical reactions occur during fermentation, and what factors affect the final results.I will demonstrate one other recipe: sourdough crackers, pancakes or chocolate chip cookies.
At the end of the class, you will go home with two loaves of sourdough, a baking kit including a mature starter, a banneton, a bread bag, a lame for scoring, a basic sourdough recipe and the knowledge to continue baking and experimenting at home!

Option 2. Sweet Mexican bread
You can choose to bake pan de muerto or conchas and pollos. We start from scratch milling o own flour and preparing the bread. You will learn about Mexican traditions and the symbolism behind the recipes. You will take home a baking kit with your starter, a bread bag, a lame for scoring, one large pan de muerto or 6 conchas and pollos to share

I am a scientist with a passion for teaching and baking! My background as a scientist allows me to offer a unique experience for people who want to learn how to bake using traditional techniques and understand the science behind it. I have been teaching sourdough baking and science to the general public via social media and now I want to host my classes in person with small groups. During the pandemic, I offered free courses to encourage people to bake at home. Later this year, I started my own bread business and sold my bread at SOWA Farmer's Market in Boston. Some clients called it "the best sourdough in Boston"! This encouraged me to offer baking classes to people interested in perfecting their technique and sharing with them my passion for fermenting food, transmitting science and feeding your body intelligently.

The class takes place in my home. I have a beautiful apartment with a large kitchen that can host 6-8 people at a time. I love sharing my space with friends and family, and I will do my best to make you feel welcomed.
