You will learn how to make many types of homemade pasta in a real laboratory of pasta, reviewed among the "best 10 pastificio in Rome" . In a maximum 8 people class, we will start with handmade pasta, made with different kind of flours: like ancient grain Triticum Monococcum, Grano Saraceno (buckwheat) and wholemeal flour. We will do thin sheets dough, explanation of safe food cutting procedures, realization of three types of ravioli, tortellini, fettuccine with two tipical italian sauces. The experience includes a delicious tasting of local cheese or homemade prosciutto hand cut.
We can also accomodate GLUTEN allergy guests for a very tasty fresh pasta and VEGAN guests for pasta without eggs.
We will cook all pasta and the sauces made during the class, eating our differents kind of pasta done, sipping good italian wine. An express tiramisu preparation will follow as a dessert. Moreover, to all the participants will be offered complimentary, the exclusive Professional Chef Hat with logo of "Pastificio Faini" and also the apron with logo. In additional to the regular program, everyday of the week a different version will be presented: Monday-Wednesday-Saturday Carbonara sauce; Tuesday-Friday Cacio e Pepe sauce; Thursday gnocchi!
A membership registration is requested to make the class. (no extra cost is due)

I'm chef and pasta maker. My parents worked in their "pasta shop" for 40 years making pasta with passion. Five years ago, I opened my own pasta shop and I was very surprised to have been named among "the best 10 Pastificio in Rome".
I have also been reviewed on the prestigious " Il Gambero Rosso" guide from 2017.
I've been inspired by the "magical" pasta made by my grandmother when I was a child and I'm so proud to teach how to make this special pasta to everyone. Transmit all the love and passion of my family, today, represents my dream.

Pastificio Faini is shop where we make and prepare pasta. Is located in the historic district of San Lorenzo in Rome, just 10 minutes walk from the metro station Vittorio Emanuele and liked by many bus like number 71 that run in the center. I will wait you in my laboratory.

We had a wonderful time at Emanuele. The pasta was so good, and we made it ourself! Emanuele can talk very enthousiastic about cooking, it was so much fun!

This was a top highlight of our two week trip! A cozy setting to learn how to make pasta by hand was a dream! Everything from the communication, to the ambiance, details of the menu, instructions and evening were so much fun. Emanuele and his assistant were kind, funny, helpful and engaging the whole evening. We felt like we were getting a 1 of a kind experience. During our class we also received wine and cheese and we learned so much about not just making pasta, but sauces etc. Emanuele also answered a few of my off-topic Italian cooking questions and was so nice about it. We had a delicious dinner that we prepared and overall it was such a fun evening. We hope to take another class with him in the future!!

A wonder time learning how to make some delicious pasta dishes. Emanuele was a great instructor, teaching is in what goes into making high level pasta. I would highly recommend this experience. He was also very helpful with accommodating dietary restrictions.

Highly recommend! The place for the workshop was very clean and cosy. Emanuele was a very kind and funny Host and we could learn a lot about the Italian culture, food tradition and cooking techniques. What we cooked was just delicious and everything worked exactly like in his Airbnb description. If you want to have dinner in Rome but also learn by doing yourself, you should definitely book this experience.
