This was a really cool experience - it's not often that you get to spend an hour learning from a great culinary mind. For myself personally, I'm a huge fan of the philosophies that Chef Brad has with regards to his food and where he sources ingredients. The reverence and deep knowledge of his ingredients and how to use them year round through various preservation techniques is just awesome, and being the culinary nerd that I am I loved being able to soak everything up and ask questions. I really learned a lot, and I've got all kinds of fun things to try with my own cooking now. If you're interested in learning how to capture the flavors of ingredients at their peak and preserve them for use all year as well as other techniques (how to fillet and salt-cure Mackerel in our case), and how a Michelin-starred chef puts together a dish (not just plating, but the thought that goes into how to layer flavors), don't hesitate to sign up for this experience. Chef Brad was a great host and I'd happily participate in any other experiences he puts together.
