I WILL SCHEDULE WORKSHOPS ONCE THE COVID-19 CRISIS HAS SETTLED DOWN

In my workshop you will work with me to make a soft (e.g. Camembert) and hard (e.g. Gouda, Colby, Cheddar, Blue) cheese. As cheese needs to be aged in a controlled environment, you will have to return after a month (Camembert) or 3 months (hard cheese) to collect a sample of what you made.

You will meet the other workshop participants (I limit that to at most 6). We will discuss the origins of cheese, types of cheeses, how cheese-making developed in different regions, and the science of cheese.

I will explain the basics of cheese-making and assign tasks so that everyone is involved. The process comprises sterilising the equipment, warming the milk, ripening with bacteria, setting with a coagulant, cutting and stirring the curds, putting the curds into moulds and finally washing up. This takes about five hours during which we will serve lunch.

There is more that has to take place over the following days, weeks and months before the cheese is ready to eat, and that I will take care of.

The workshop will take place in my well-equipped kitchen. You will also get to see my cheese cave where I age the cheeses and some equipment for cheese-making that I built.
