Emilia Foodie Experience is an extraordinary journey through a landscape of rivers, plains and hills and the jewels of the Italian gastronomic tradition!
We will discover the secrets of Parmigiano-Reggiano cheese and Prosciutto di Parma, their ancient origins and unparalleled balance of knowledge, man’s passion and nature’s bounty.
We will discover the reasons why Parmigiano-Reggiano cheese was invented in the Emilia region during the Middle Ages. We will be able to follow the whole production chain, starting from the feeding of milking cows. We will see the cheese production process in full swing, and we will visit all the rooms of the cheese dairy: the production room, the shaping room, the salting room and the amazing warehouse! The dairy experience will end with a tasting of delicious Parmigiano-Reggiano cheese.
We will reach an authentic Prosciutto di Parma Plant, crossing the Parma Hills region, where the rearing of pigs developed since ancient times, favored by the large woods and the presence of oak trees. We will stop on the way at the foot of the Castle of Torrechiara to take some pictures.
During the visit to the plant we will be able to observe the production process of this delicacy and learn about its important history and all the standards which must be complied with, to fully understand the the origins of the unique character of Parma ham: the sweetness!

Staðsetning

We will visit an authentic Parmigiano-Reggiano cheese dairy during the production procees and the visit will be followed by a declicious tasting of different ageings of cheese. After the Parmigiano-Reggiano cheese dairy experience, we will head to a plant situated on the Parma hills, where the famous Prosciutto di Parma is produced, for the visit to the Prosciutto facility followed by tasting of Prosciutto and other traditional cured meats.

This was a truly amazing experience. Michelle was a plethora of knowledge, and gave such a great detailed descriptions of every step of the process for us. She also gave a great background history of the area, and the food production. We started on the farm, which was really wonderful, and went to the parma cheese factory, which was so cool to see happening! Then we headed to the hills of Parma to see the Prosciutto di Parma being made at a plant there. It was so interesting and definitely once in a lifetime. Michelle went out her way to accomodate us, and we definitely wouldn't have been able to have an experience like this on our own. You do need to rent a car, but she will guide you to each place and it is very easy. Definitely recommend for anyone interested in food, food production and have a genuine experience with a real local.

This tour was great and one of the highlights of our vacation. The cheese producer was especially interesting and was well worth the early wake-up time!

• Dogs are not allowed inside the facilities • The Prosciutto production process is a weekly cycle (Mon-Fri). Sometimes we see the salting, at times the washing and other times the grooming. During the visit, when on Saturday or Sunday, one can see all the rooms used for the production process.
